Quick and easy chocolate chip muffins
So I was looking for a recipe to make some chocolate chip muffins the other day and finally came across a quick and easy one:
* 2 cups all-purpose flour
* 1/3 cup light-brown sugar
* 1/3 cup sugar
* 2 teaspoon baking powder
* 1/2 teaspoon salt
* 2/3 cup milk
* 1/2 cup butter — melted and cooled
* 2 eggs – beaten
* 1 teaspoon vanilla
* 1 package (350 grams) chocolate chips
* 1/2 cup walnuts or pecans — chopped
Grab your muffin tray, grease it up and set the oven to 200. Take a large bowl, place the flour, sugars, baking powder and salt together and stir. In a second bowl, stir the milk, eggs, butter and vanilla until they’re blended.
Make a small ‘hole’ in the center of the dry ingredients, add the milk mixture and proceed to stir until all ingredients are blended. Add chocolate chips and nuts to the mixture.
Fill the muffin tray with batter and bake for roughly 15 minutes. Remove the muffin tray from the oven, place on a cooling tray and allow to cool.

Sheesh, they look so easy – back in my day we had to make emulsions and use oil and whatnot, lol. The damn things took forever to make and were a real mission too.
Hmmm, chocolate…!

Chris, if you’re looking to imbibe some alcohol (you drunkie), I suggest you rather have them with coffee, and dip warmed chocolate muffins into brandy before consuming them.
Mmmmm.

Hi Chris, here you have muffins, while I am still waiting for those pictures of you doing a “naked chef bakes carrot cake”. I will have to give them a try. I am sure I can alter the recipe and make blue berry muffins instead.

@Richard – That sounds like a good idea actually, I meant to bake these things today, but just didn’t get a chance :(
@Ian – I didn’t get a chance, today was a little more manic than expected! I do have some munchies though :)
@Jacques – Haha, I don’t think so :P
@Rustig – Shit mate, sorry hey, hehe, I just didn’t find the time and to be honest, it’s freezing on the 16th floor, naked chef just wouldn’t do my justice ;)

Bad excuse! You can always turn the oven up to make things “rise”. Cold weather does have an effect on baking!

Haha, that’s true, but that means I have to stay near the oven the whole time doesn’t it..

Hi Lisa, did you manage to find one? I’ll have a look around and see what I can put together, alright?

I’d imagine most of them would work out, just make sure you get it from a well known website :)
