One of my favourite cakes is Carrot Cake and after reading a damn good article on “Panic Buy Carrots“, which is a long story in itself, read here, I found a lovely recipe for carrot cake..
2 1/2 C + 2TB whole wheat pastry flour.
1 1/2 tsp baking soda.
1 1/2 tsp cream of tartar.
1 1/2 tsp cinnamon.
1/4 tsp ground nutmeg.
1 1/2 C honey.
1/3 C frozen pineapple juice concentrate, defrosted.
2 tsp vanilla
2 egg whites, unbeaten.
1 1/2 C grated, peeled carrots.
2 4 oz. jars carrot baby food puree.
1 C raisins.
2 egg whites, lightly beaten.
It’s as simple as that, in my 7 free hours on Saturday, I’m going to try and squeeze this in, it’ll be fantastically rewarding!

I think as an occasional visitor here, I would like a picture of the end result made by you. Maybe a few pictures with you in front of the oven. Also carrot cake fan, find icing sometimes too sweet.
Haha, well, my girlfriend and I have decided that Saturday, in my free time, we will bake one, I will make sure that I take some pics and will post them out.. don’t think I’ll dare to post one of my in an apron :P
As an ex-chef I would prefer the apron part. We have to keep it with the domesticated theme. I do not expect you to be naked, only with apron. Need one to proof that you will clean the dishes and not the poor girlfriend.
Baby food carrot puree, yum.

Well, dodgy as it may be, the recipe calls for it to be added to the cake. 2 jars nogal, lol.
So baking is what all hip metrosexuals are doing this winter then? ;-)
Chris where did you get this recipe? In all my life as a chef never seen carrot cake with carrot puree! Grated carrot yes!
